Duchess Potatoes
Things needed:
10-12 potatoes
3 eggs
2 tablespoons butter
salt & pepper
Boil potatoes,peel,and mash
Add butter and eggs and a little salt and pepper
Make into balls and fry in hot oil till light brown

Meats
Old Fashioned Southern Fried Chicken
Things needed:
1 young Chicken
1.5 or 2 cups flour
some grease (shortening or vegetable oil)
Salt and Pepper
Cut chicken in pieces.
Melt enough grease in a frying pan to bring level to 2 inches.
Sift your flour on a piece of wax paper, sprinkle flour with salt and pepper.
Roll chicken in flour mixture until coated.
Place chicken in hot grease and cover for 5 min. until bottom side is browned.
Turn chicken and cover for another 5 min. remove lid and continue cooking until done (takes about 30 min. in all).
Do not turn chicken more than once.
Meat Loaf
Things needed:
2 Lbs. ground beef
1/2 Lb. ground pork
1 cup bread crumbs
3 tablespoons butter
1 egg
1 teaspoon salt
1 teaspoon pepper
1/2 cup hot water
Add butter to hot water, then add all other ingredients and mix well. Place in baking dish or pan at 375 for 40 min.
Fried Rabbit
Things Needed:
Rabbit
salt water
flour
pinch of salt and pepper
Cut up Rabbit and soak in salt water for one hour. Sift flour and salt and pepper. Roll Rabbit in mixture until well coated. Fry like you would Chicken in hot oil.
