Soups

Potato Soup
Things Needed:

2 cups diced Irish Potatoes
2 cups hot water
2 cupfuls milk
salt and pepper

Cook the Potatoes rapidly for about 10 minutes, stirring to keep the Potatoes broken apart. Add the salt and white or red pepper at this time. Have your milk hot and when your Potatoes are done add the milk. Sprinkle with salt and or pepper and a bit of butter if so desired.

Easy Chocolate Fudge

One of the best recipes I've ever done was how to make simple chocolate fudge. All you need are a bag of chocolate chips,a can of sweet condensed milk, and some vanilla.

Simply melt the chocolate chips on low heat, add a teaspoon of vanilla, then pour in the sweet condensed milk till you have a thick paste. Put in the refrigerator for 2.5 hours and thats it.

Breads

Sweet Southern Cornbread
Things Needed:
1-Cast Iron Frying Pan (10")
2 cups self-rising cornmeal mix
1.5 cup buttermilk
1/4 cup oil
1 egg (beaten)
3 tbs sugar
Shortening

Preheat oven to 450
Grease cast iron frying pan with shortening and place on top rack of oven for 15-20 min. or until smoking hot.
While waiting for pan to heat up, mix all ingredients in a large bowl.
As soon a pan starts smoking pour contents of bowl into pan and place on middle oven rack for 25-27 min. until golden brown on top.
Always use a cast iron frying pan for best results

Duchess Potatoes

Things needed:
10-12 potatoes
3 eggs
2 tablespoons butter
salt & pepper

Boil potatoes,peel,and mash
Add butter and eggs and a little salt and pepper
Make into balls and fry in hot oil till light brown

Meats

Old Fashioned Southern Fried Chicken

Things needed:
1 young Chicken
1.5 or 2 cups flour
some grease (shortening or vegetable oil)
Salt and Pepper

Cut chicken in pieces.
Melt enough grease in a frying pan to bring level to 2 inches.
Sift your flour on a piece of wax paper, sprinkle flour with salt and pepper.
Roll chicken in flour mixture until coated.
Place chicken in hot grease and cover for 5 min. until bottom side is browned.
Turn chicken and cover for another 5 min. remove lid and continue cooking until done (takes about 30 min. in all).
Do not turn chicken more than once.

Meat Loaf

Things needed:
2 Lbs. ground beef
1/2 Lb. ground pork
1 cup bread crumbs
3 tablespoons butter
1 egg
1 teaspoon salt
1 teaspoon pepper
1/2 cup hot water

Add butter to hot water, then add all other ingredients and mix well. Place in baking dish or pan at 375 for 40 min.


Fried Rabbit

Things Needed:
Rabbit
salt water
flour
pinch of salt and pepper

Cut up Rabbit and soak in salt water for one hour. Sift flour and salt and pepper. Roll Rabbit in mixture until well coated. Fry like you would Chicken in hot oil.
